Tomato Pie, Oh My!


My garden is running over with tomatoes and having so many all at once you have to find recipes to use them up.  Here's a wonderful recipe for a Tomato Pie, yummy!




 
1 pre-baked pie shell
1 1/2 c. fresh mozzarella cheese
1 med onion, thinly sliced
1/2 tsp dried basil
...
1/2 c. mayo
3 med tomatoes, thinly sliced
1 egg
Spread 3/4 c of mozzarella in bottom of prebaked pie shell. Layer tomatoes and onions. In a separate bowl mix the rest of the cheese, mayo, basil and egg. Dash salt and pepper, spread on top. Bake at 350 for 45 to 50 minutes or until golden brown.


Better make 2 cause this goes FAST!

This and That

It's a wonderful feeling when you can cook an entire meal for your family from the garden you planted in the spring!

We also had fresh cucumber slices and tomato sandwiches.  Why does everything taste so much better when its from your garden? 



Baby chicks turned 2 months old yesterday, they are getting soooo big!  Looks like an expansion is going to be needed to the coop with all the new babies!

DH built a tractor coop for a friend and look how he transported it! Redneck Transportation at its finest....



Here's hoping he made it!

I was tired of my plain old black bike seat. I looked for something different. Something I could change with my mood. I found nothing so I decided to make my own and BumWrap was born. A seat cover for every season and every mood!
